1/4 cup mustard
2 tablespoons white wine vinegar
1 tablespoon sugar
1 teaspoon Dijon mustard
1/3 cup olive oil
1/4 cup fresh dill
4 cups grated beetroot
2 cooked beets, sliced (500g)
1 small cucumber, sliced
2 tomatoes, halved
200g smoked salmon fillets
Salt to taste

In a bowl, combine the first four ingredients and reserve
A little at a time, add the olive oil while continuously stirring
Add the chopped fresh dill and season the dressing with salt
Spread the beetroot over a large plate and arrange the cooked beets around it
In the center, place the cucumber and tomato
On top, arrange the smoked salmon
Season with a little of the dressing and serve the remainder on the side
