1/4 cup of red wine vinegar
1/4 cup of chopped parsley
2 tablespoons of dry red wine
2 tablespoons of lemon juice
1 tablespoon of finely chopped onion
1 tablespoon of finely chopped green onion
1 tablespoon of chopped fresh thyme
2 tablespoons of mustard
1 1/2 tablespoons of grated ginger
1 minced garlic clove
3/4 cup of olive oil
2 cups of torn spinach leaves (American, Roman, flat or curly)
120g of crumbled gorgonzola cheese

Combine the first ingredients (excluding spinach and gorgonzola) in a medium bowl
Season with salt
Arrange the spinach leaves in 8 individual plates and add the dressing
Sprinkle the gorgonzola on top.
