Blend the spinach with olive oil, lemon juice, water, and salt in a blender

In a bowl, place the tofu and pour the marinade over it
Let it marinate for about 1 hour

In a salad bowl, arrange the spinach leaves and top with the tofu and marinade
Cut the cherry tomatoes into quarters and use as garnish.
