1/4 cup of lime juice

2 mangoes, diced
4 green onions, chopped
3 cups cooked rice

Combine lime juice, vinegar, oil, and hot pepper sauce; whisk well
Slice the sweet herb into thin strips and then into small pieces
Remove seeds from mango but do not peel: cut into cubes
Mix with sweet herb and seasoning, and chopped green onion
Add rice and mix well
Refrigerate for a few hours before serving
