4 cups of cooked and chilled rice
1 large cucumber, cut into small cubes
3 tomatoes, seeded and chopped
1 tablespoon of fresh parsley, chopped
1/2 cup of olive oil
1 tablespoon of apple cider vinegar
1 tablespoon of Dijon mustard
salt and pepper to taste
4 cups of cooked and chilled rice
