3 cups cooked rice
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
3 tablespoons chopped fresh parsley
1/2 tablespoon vinegar
2 tablespoons olive oil
Salt, black peppercorns, and black olives to taste
3 cups cooked rice
