In a large bowl filled with cold water and salt, place the onion and let it sit for 10 minutes
Drain and repeat the process three more times or until the onion has lost all its pungency
Drain and transfer to a large bowl
Combine the sweet potatoes and parsley and mix well
Serve with olive oil.
