1 1/2 kg of medium-cooked and peeled sweet potatoes
1 cup (225g) of mayonnaise
1/4 cup of soy sauce
1/4 cup of vinegar
To taste, with black pepper
200g of black bean sprouts, blanched and drained
2 large red bell peppers, cut into 1/2 cm pieces
1/3 cup of chopped green onion

Let the sweet potatoes cool slightly and cube them
In a bowl, mix together the warm sweet potatoes with mayonnaise, soy sauce, and vinegar
Season to taste with black pepper and mix carefully
Add the black bean sprouts and red bell peppers
Cover and refrigerate for at least 2 hours
Arrange on a serving platter and sprinkle with chopped green onion
Serve in 12 portions.
