5 medium sweet potatoes
4 tablespoons olive oil
200g boneless, skinless chicken breast, cut into cubes
1 cooked carrot, cut into cubes
100g black olives, pitted and chopped
Parsley or cilantro to taste
Dressing
3/4 cup mayonnaise
1/4 cup orange juice
1/4 cup passionfruit juice

Boil the sweet potatoes in salted water until they're tender, then drain and cut into thick slices
In a large skillet, heat the olive oil over medium-high heat and cook the chicken cubes until browned
In a separate bowl, combine the cooked sweet potatoes, chicken, carrot, olives, and parsley or cilantro
Dressing
Combine the mayonnaise, orange juice, and passionfruit juice in a bowl
Pour the dressing over the salad.
