Cook the sweet potatoes in boiling salted water until they are tender but still firm
Drain and cut into four parts
Mix the olive oil, vinegar, salt, and pepper while warm
Add the chopped onion and parsley
Pour over the warm sweet potatoes and mix well
Serve immediately
