Step 1: Wash the sweet potatoes thoroughly under running water
Step 2: Boil the sweet potatoes in 3 liters of water for 25 minutes or until tender
Drain and rinse with cold water
Let it cool down completely
Step 3: In a large bowl, mix together the remaining ingredients until well combined
In a serving dish, place the cooked sweet potatoes and top with the dressing
Sprinkle with paprika and garnish with parsley leaves.
