Wash the sweet potatoes, cook them with their skin
Peel and cut (still warm) into wedges
Season to taste with salt and pepper
Mix in beef broth, finely chopped onion, and vinegar
Let it simmer
Pour over the sweet potatoes
Mix in mustard, olive oil, and eggs, adding carefully to the sweet potatoes
Cut tomatoes into wedges, remove seeds and cut the rest into small squares
Add to sweet potato salad
Let it rest for a while
Just before serving, sprinkle with green onion
