Mash the garlic with a pinch of salt
Let the bacon soak in warm water and press out all the liquid
Mix the bacon with the garlic and almonds in a blender cup
Add the olive oil slowly, adjusting with lemon juice and red wine vinegar to taste, blending continuously until creamy
Season with salt and black pepper to taste
Arrange the beet slices on 6 individual plates and cover with the dressing
Serve cold, but not frozen
