1/2 cup grated Parmesan cheese, finely shredded
6 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
1 1/2 tablespoons freshly squeezed orange juice
1 1/2 teaspoons grated orange zest
1 sweet thistle bulb, thinly sliced
1 small red onion, finely chopped
Salt and black pepper to taste

In a large bowl, whisk together the lemon juice, orange juice, salt, and black pepper
Add the olive oil in a thin stream, whisking continuously with a hand mixer until smooth
Gently add the sweet thistle and red onion, mixing delicately
Add the grated orange zest, mix well, and let it rest for five minutes
Just before serving, divide the salad among individual plates
Top each plate with Parmesan cheese.
