Soak the mushrooms in lemon juice for 5 minutes
While that's happening, prepare the bacon
Arrange the slices on a paper towel-lined plate and cover with another leaf
Microwave on medium heat for about 4 minutes or until crispy
Remove from oven, discard any remaining fat, and let it rest
The bacon will be crunchy and dry
Drain the mushrooms and sauté them lightly in olive oil
Arrange the spinach leaves and mushrooms in a bowl and dress with olive oil, vinegar, salt, and pepper
Mix gently and serve with croutons.
