2 cups cooked black beans
1 cup cooked rice
2 hard-boiled eggs, diced
1/2 cup chopped pickles
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
Salt and black pepper to taste

Drain the black beans and place them in a bowl
Add the remaining ingredients, except for the lettuce leaves, and refrigerate
When serving, place it over lettuce leaves
