2 bunches of arugula
1 handful of escarole
1 handful of curly endive
250g fresh spinach leaves
1 minced shallot
Crystal seasoning
Chop the greens into bite-sized pieces. Arrange on a salad plate and sprinkle with minced shallot. Gently mix in the following dressing:
1/4 cup apple cider vinegar
1/2 teaspoon salt
1 tablespoon mustard powder
1/4 cup olive oil
1 cup proprietary salad oil

Mix together the apple cider vinegar, salt, and mustard powder
Add the olive oil and mix well
Slowly add the proprietary salad oil, whisking constantly
This dressing has a thick consistency
Chill in refrigerator before using.
