500g of shredded cooked chicken breast
3 cups of Italian peas, cut into cubes
1/4 cup of freshly squeezed lime juice
3/4 cup of water
1/3 cup of chopped mint leaves
1/2 cup of olive oil
1 tablespoon grated ginger
3 ripe tomatoes, seeds removed, diced
Salt and black pepper to taste
4 cups of fresh arugula
Mini arugula for garnish

In a large bowl, combine all the ingredients except for the arugula
Season with salt and black pepper and divide among six plates
Top each plate with washed arugula, garnish with mini arugula and serve.
