Prepare 2 hours in advance
Wash the chicken pieces and bones, place them in a pot with some water, add 1 tablespoon of salt, and cook until the chicken is tender
Let it cool down, remove the skin and bones
Cut the meat into smaller pieces
Cook the macaroni according to taste
Prepare the sauce: blend together olive oil, garlic, spinach, and 3/4 teaspoon of salt until smooth
Mix the spinach mixture with parmesan cheese in a large bowl
Add the chicken and macaroni, mixing well to coat all ingredients with flavor
Pour into a serving dish and garnish with tomato slices
