2 beaten eggs
1/4 cup tomato juice
1/4 cup crushed salted crackers (cream cracker, etc.) blended in a blender
1 tablespoon finely chopped onion
1/2 teaspoon mustard
360g cooked and grated prosciutto
250g cooked and grated pork
Mustard Sauce:
4 tablespoons honey
1 tablespoon wine vinegar
1/2 teaspoon mustard

In a bowl, mix the eggs and tomato juice
Add the crushed crackers, onion, and mustard
Mix well
Add the prosciutto and pork
Mix well
Shape in an oval form in a refrigerated container
Bake at moderate heat (170°C) for about 1 hour, or until golden brown
Mix the mustard sauce ingredients and pour over the meat
Bake for another 30 minutes, basting occasionally with the sauce
Add a little water to prevent the sauce from drying out
Serve in 12 portions.
