Soak the gelatin in cold water
Drain the pineapple well and reserve the liquid
Add water if necessary to make 1 cup
Mix the eggs lightly, then add the pineapple juice
Cook in a double boiler until it thickens slightly
Combine the softened gelatin and mix until dissolved
Chill in the refrigerator
Mix in the yogurt, beating the gelatin first if it's too firm
Dice the mangoes without peeling them and add to the gelatin mixture
Pour into a ring mold, chill in the refrigerator until set
If desired, sweeten with a little artificial sweetener.
