1 cooked chicken, or turkey, diced
4 tablespoons of olive oil
2 tablespoons of lemon juice
1 large head of lettuce
1 cup of chopped fresh parsley
1 large ripe avocado

Remove the skin from the chicken and debone it
Cut the meat into small pieces (should yield about 4 cups)
Place in a medium-sized bowl
Mix together the olive oil and lemon juice, and pour over the chicken
Stir well
Cover and refrigerate until serving time
At serving time, place a large leaf of lettuce on each plate
Chop the remaining lettuce, mix with parsley, and distribute among the plates
Top each plate with small mounds of seasoned chicken
Cut open the avocado, remove the pit, and slice into thin strips lengthwise
Garnish each plate with 3 slices of avocado
Drizzle a little lemon juice over each plate to prevent browning
Serve within 6 hours.
