2 cloves of minced garlic
1/4 cup of tahini
1/2 cup of lemon juice

2 tablespoons of water

Cook the goose liver in plenty of water for about 50 minutes, until it becomes tender
Drain and let it cool in a salad bowl
In a blender, blend all the seasoning ingredients well to obtain a smooth mixture
Pour it over the goose liver, mix well, and garnish with green scallion and tomato
Let it sit for 10 minutes
