2 1/2 cups of turtle beans soaked for 4 hours (500g)
To season
1/4 cup of finely chopped onion
1/4 cup of finely chopped green pepper
2 cloves of crushed garlic
1/4 cup of tahini
1/2 cup of lemon juice
2 tablespoons of soy sauce
2 tablespoons of water
1/3 cup of olive oil
To taste salt
Green onions and tomatoes for garnish

Cook the turtle beans in plenty of water for 50 minutes, or until tender
Drain and let it cool in a salad bowl
In a blender, blend all the seasonings ingredients until smooth
Pour over the turtle beans, mix well, and garnish with green onions and tomatoes
Serve at room temperature.
