100g of pecans
4 oranges
50g of fresh ginger
3 tablespoons of olive oil
salt and black pepper to taste

Cut the chicken into bite-sized pieces
Cut the pecans into strips
Zest one of the oranges
Peel all four oranges, then separate into segments
Place them over a bowl to catch any juice that may run off
Secure the oranges with a plate or other heavy object to prevent juices from spilling out
Pierce the ginger finely
Mix the orange juice (obtained by peeling the oranges) with olive oil, grated orange zest, and poked ginger
Taste and adjust seasoning as needed
Combine the chicken, pecans, and oranges in a bowl
Add the dressing and stir gently
Allow it to rest for 1 hour before serving
