1 1/2 cups of lentils soaked overnight with 1 day of advance notice
150g of smoked bacon, cut into cubes
5 tablespoons of olive oil
2 tablespoons of vinegar
1 cup of chopped fresh parsley
Salt to taste
2 tablespoons of chopped chives (optional)

Cook the lentils for about 30 minutes or until tender
Drain
Fry the bacon over medium heat, with the olive oil and vinegar until crispy
Combine the lentils with the parsley and season with salt to taste
Add the chopped chives if using, and mix well
Serve in 6 portions.
