2.5 kg of octopus
5 tablespoons of lemon juice
5 tablespoons of red wine vinegar
1 cup of olive oil
3 finger-shaped hot peppers, chopped
1 1/4 cups of chopped cilantro
5 medium tomatoes, seeds removed and diced
10 tablespoons of green onions (green part only), sliced
to taste salt
2.5 kg of octopus

Clean the octopus and cut it into rings
Boil a large pot of water seasoned with salt and add the octopus and tentacles
Cook until they turn opaque, about 1 minute
Drain immediately and plunge into cold water to stop cooking
Combine the remaining ingredients in a bowl
Add the octopus and mix well
Let it rest in the refrigerator for a few hours
Serve on lettuce leaves
