1 1/4 cup chopped cilantro

1 Clean the octopus and slice it into rings
In a large pot, bring water to a boil, add salt and submerge the octopus
Cook for 1 minute
DRAIN and run under cold water
DRAIN again and reserve
2 In a bowl, combine the remaining ingredients
Add the octopus and mix well
Garnish with tomato slices and refrigerate for at least 2 hours before serving
If desired, serve over lettuce leaves.
