1/4 cup of olive oil
2 tablespoons of apple cider vinegar
2 cups of grated Parmesan cheese
2 large sweet potatoes peeled and cut into 1.5 cm cubes
2 medium-sized potatoes peeled and cut into 1.5 cm cubes
1 small bunch of fresh scallions cut into thin slices
Salt to taste

Boil the potato until it's tender, about 10 minutes or when a fork slides in easily, but still firm
Let it cool down

In a large bowl, combine the boiled potato with the remaining ingredients
If desired, add salt to taste
Refrigerate until ready to serve.
