Prepare the mozzarella according to instructions
Cut into slices and season with salt and black pepper to taste
Mix the egg with 2 tablespoons water and a pinch of salt
Dredge the mozzarella in this mixture, then in flour
Fry in butter or margarine until golden
Place in a refractory form, drizzle with lemon juice and sprinkle with scallion green
Bake in a moderate oven (180°C) until well done
Garnish with lemon zest and serve immediately for 4 people.
