1.5 kg of muscle
1 large onion cut into pieces
2 cloves of garlic

2 cups of water
For the dressing:
2 tablespoons of vinegar
1 tablespoon of mustard
to taste
1 cup of fresh mushrooms (or canned)
3 tablespoons of lemon juice
8 firm cherry tomatoes
2 tablespoons of parsley leaves

Clean the muscle thoroughly
Blend the onion and garlic with water in a blender
Place it in a pressure cooker and season with salt
When it starts to boil, add the muscle
Close the lid and cook for 40-50 minutes or until tender
Remove from heat, let cool, and cut into thin strips. Reserve
Prepare the dressing: mix vinegar, mustard, salt, and pepper
Pour over the cooked muscle and let it sit for 1 hour
Wash fresh mushrooms, cut them into slices, and immediately marinate with lemon juice (if using canned mushrooms, simply cut them into slices)
Drain the muscle, arrange on a platter with mushrooms, cherry tomatoes, parsley leaves, and lettuce leaves
Pour the dressing over the top
Serve 8 portions.
