Ingredients
6 hard-boiled eggs, roughly chopped
3/4 cup mayonnaise
2 tablespoons Dijon mustard
3 tablespoons finely chopped pickle relish
Salt and black pepper to taste
1 tablespoon chopped fresh cilantro
1 round rye bread loaf, cut in half
1 bunch of arugula
1 bunch of radicchio
To serve
Dijon mustard and mayonnaise to taste

Preparation
In a bowl, mix together the eggs, mayonnaise, Dijon mustard, and pickle relish
Season with salt, black pepper, and cilantro
Spread the mayonnaise and mustard mixture on the rye bread and top one half with arugula and radicchio leaves
Place the egg mixture on top of the greens
Cover with the other half of the rye bread loaf, cut into slices
Serve immediately.
