Boil the potatoes until they're tender, then let them cool
Meanwhile, season the fish fillets on both sides with salt and black pepper to taste
Arrange the fish in a single layer on a baking sheet
Brush with olive oil and water
Bake without covering at 170°C for 20 minutes, basting occasionally until the flesh flakes easily with a fork
When the potatoes are cooked, peel and cut them into 1 cm cubes
Distribute the potatoes among 4 plates, then top each plate with flaked fish, torn into large pieces
Sprinkle each plate with parsley and a bit of shallot
Season at the table with olive oil, red wine vinegar, salt, and pepper
