1 kg of cucumbers, peeled and cut into 1 cm thick slices without seeds and cored in half lengthwise

1/2 cup of heavy cream
1 tablespoon of lemon juice
4 tablespoons of plain yogurt
2 tablespoons of white wine vinegar
2 tablespoons of chopped parsley or cilantro
4 tablespoons of olive oil

In a bowl, mix the cucumber slices with salt and let it sit for 20 minutes
While the cucumber is sitting, whisk together in another bowl heavy cream, lemon juice, plain yogurt, white wine vinegar, and chopped parsley or cilantro
Slowly add the olive oil while whisking until the mixture is creamy
Drain the cucumber slices in a fine-mesh sieve under cold running water and pat dry with paper towels
Mix the cucumbers with the yogurt and cream mixture to taste with salt and black pepper
Serve in a salad bowl
Portion into 8 servings.
