6 tablespoons of olive oil
1 onion, sliced into thin rings
1 small cabbage, cut into thin strips
Salt and pepper to taste
500g cooked and sliced sweet potatoes
3 tomatoes, peeled and sliced
150g crispy bacon, diced
1/2 cup vegetable broth
50g grated Parmesan cheese
6 tablespoons of olive oil

Heat four tablespoons of olive oil in a pan, sauté the onion for ten minutes with the cabbage, salt, and pepper
Add the cooked sweet potatoes, stir to combine
Grease a baking dish with the remaining olive oil
Alternate layers of seasoned sweet potato, cabbage, tomatoes, and bacon
Finish with vegetable broth, Parmesan cheese, and aluminum foil
Bake in a preheated oven at 200°C for 30 minutes
Remove the foil and bake for an additional five minutes
Remove from the oven and let it rest for a few minutes.
