Cook the spinach and squeeze out excess water by hand
Chop the spinach and sauté it with butter or margarine until dry
Let it cool down
Crumb the Minas cheese and mix it with the spinach
Add 1/4 cup of grated Parmesan cheese and season with salt and black pepper to taste
Lightly grease a 18x27cm baking dish with olive oil
Cut the puff pastry into same-sized rectangles as the dish, making 10 pieces
Proceed by doing the following: place one piece of puff pastry, brush with egg, and sprinkle with 2 tablespoons of Parmesan cheese
Repeat this process 3 times
Spread the spinach mixture evenly over the puff pastry
Make 4 indentations in the spinach mixture and break 1 egg into each one
Sprinkle with a little salt and black pepper and cover with ham slices
Repeat the pastry process, as before, with the remaining pieces of puff pastry, always sprinkling with 1/2 tablespoon of Parmesan cheese and brushing with egg
Brush the final layer with lightly beaten egg
Once done, place in a preheated moderate oven (170°C) and bake for 1 hour
Serve hot or cold, cutting each piece so that it includes one egg
