Chop the red cabbage into fine strips
Add 1 soup spoon of salt, mix well and let it rest for 2 to 3 hours
Squeeze out some of the red cabbage each time, and reserve
Fry the onion in butter or margarine for 10 minutes
Add the grated carrot and lightly brown it
Add the red cabbage and 1 cup of chicken broth
Cover and cook over low heat for 30 minutes
Peel the cheese and cut it into fine slices
Join them to the red cabbage and cook until they're tender
Dissolve the wheat flour in the remaining 2/3 cup of chicken broth
Add lemon juice to this mixture, mix well, and pour over the red cabbage
Cook the red cabbage for another 5 minutes
Taste and add more salt, grated carrot or lemon juice according to your taste
Serve with chicken or duck, 4-6 servings.
