4 cucumbers
1/4 cup of fresh mint, chopped
3 large cups of natural yogurt
salt and pepper to taste

Peel the cucumbers, remove the seeds, and cut into small cubes
Combine with mint and 2 cups of yogurt
Season to taste with salt and pepper
Mix well and refrigerate for exactly two hours
Drain excess water and add the remaining yogurt
Stir well and refrigerate for about 15 minutes
Serve 4 to 6 portions.
