2 cucumbers, cut into cubes

1 tablespoon of fresh parsley, or 1/2 tablespoon of dried parsley
3/4 cup of natural yogurt

Prepare ahead: Place the cucumbers in a bowl
Mix the minced garlic with the salt and sprinkle over the cucumbers
Fine-chop the fresh parsley and sprinkle over the cucumbers
(If using dried parsley, crush it between your fingers.) Mix everything well, cover, and refrigerate
Before serving, add the yogurt and mix well
Serve in 4 portions.
