4 medium cucumbers
3/4 cup (about) of cottage cheese
1/4 cup (about) of olive oil
1 small tomato, seeded and diced
Salt and black pepper to taste

Cut the cucumbers in half lengthwise and divide each half into three
Scrape off the skin, leaving some strips
Use a small spoon to scoop out the insides and reserve
In a bowl, mix together the cottage cheese, olive oil, tomato, and cucumber insides
Season with salt and black pepper
Fill the cucumber pieces
Garnish with fresh parsley leaves, if desired
