2 medium cucumbers, peeled and sliced into thin rounds

12 radishes, well washed and sliced into thin rounds
1 cup of green onion, sliced into thin rounds
1 ramekin of natural yogurt
1 tablespoon of grated ginger
Salt and black pepper to taste
3 tablespoons of chopped parsley or cilantro

Place the cucumbers in a colander and sprinkle with salt
Let it drain for 20 minutes
Wipe clean with paper towels and mix with radishes and green onion in a salad bowl
Mix together the yogurt, ginger, salt, and black pepper
Pour over the vegetables and mix well
Refrigerate for 1 to 2 hours to allow flavors to meld
When serving, sprinkle with parsley or cilantro
