3 long cucumbers
1 1/2 cup of cooked and chopped shrimp
1/4 cup of chopped green onion
2 tablespoons of chopped fresh cilantro
2 tablespoons of diced tomatoes
1/8 teaspoon of dry dill (optional)
to taste with salt, black pepper, and lime zest
1/4 cup of mayonnaise
4 ripe black olives, pitted
1 red bell pepper

3 long cucumbers

Cut a thick slice from each cucumber, lengthwise
Remove the seeds from this slice, leaving about 1/2 inch of shell
Chop the remaining cucumber into cubes to make up 1/4 cup
Scrape out the pulp from the remaining cucumber, leaving a shell about 1/2 inch thick
In a bowl, combine the shrimp, chopped cucumber, green onion, cilantro, and tomatoes
Season with dill, salt, black pepper, and lime zest to taste
Add the mayonnaise and stir gently to mix well without mashing or spoiling the filling
Stuff each cucumber shell with this mixture
Garnish with strips of cucumber peel, bell pepper slices, and pitted olives
Serve immediately.
