For the dressing
1 cup of olive oil or vegetable oil
1 small onion, finely chopped
1/2 cup of white vinegar
1/2 cup of honey
1 tablespoon of pepper sauce
Salt to taste
For the salad
3 cups of chopped arugula leaves
3 cups of chopped endive leaves
2 cups of smoked turkey breast, cut into cubes
2/3 cup of crumbled blue cheese or fresh Muenster
2/3 cup of coarsely chopped nuts (pecans or walnuts)
1 medium avocado, pit removed, cut into cubes

Prepare the dressing: in a blender, combine the olive oil, onion, vinegar, honey, pepper sauce, and salt
Blend lightly and set aside
Store the dressing at room temperature for up to 4 hours
In a large salad bowl, arrange the chopped greens
Just before serving, add the dressing and remaining ingredients
Mix delicately and serve immediately
