2 cups of cauliflower florets
2 cloves of garlic, minced
1 red bell pepper, fresh or canned, diced
3 hard-boiled eggs, chopped
1/2 teaspoon of salt
1 tablespoon of olive oil
1 tablespoon of mustard
1 tablespoon of melted butter or margarine
3 tablespoons of lemon juice
1/2 cup of whipped cream or heavy cream
sour cream or chives for garnish (optional)
2 cups of cauliflower florets

Place the cauliflower in a pot with boiling water
Allow it to boil again, then drain well
Transfer the cauliflower to a bowl and mix with the garlic and bell pepper
Pulse 3 hard-boiled eggs through a sieve, or mash well
Add the salt, olive oil, mustard, and melted butter or margarine
Mix well
Add the lemon juice and stir
Combine the remaining salad ingredients with the egg mixture
Garnish with egg whites and chives, if desired
Serves 4.
