500g of soybeans
2-3 cloves of garlic, minced
2 medium onions, finely chopped
2 medium carrots, peeled and grated
green onion, finely chopped
1/2 cup of olive oil
salt to taste
2 tablespoons of apple cider vinegar
1 tablespoon of soy sauce
1/4 cup of chopped fresh cilantro

Choose and wash the soybeans
Place them in a bowl and cover with water
Let it soak for one day
Drain and place them in a pot with water, covering them
Bring to a boil, then reduce heat and let simmer
Cook for 2 hours or until tender
Add garlic, onion, carrots, green onion, olive oil, and salt
Continue cooking on low heat for about 30 minutes
Add apple cider vinegar and soy sauce
Simmer for an additional 5 minutes
Remove from heat and let cool
Mix in fresh cilantro
Serve at room temperature or refrigerate until serving time
