2 cans (200g each) of mixed vegetables, drained
1/2 to 1 medium onion, cut into rings
2 tablespoons of pitted green olives, sliced
1/3 cup of creamy dressing or mayonnaise
lettuce leaves
2 cans (200g each) of mixed vegetables, drained

Mix all the ingredients together, except for the olives
Chill in the refrigerator for 15 minutes or until serving time
Serve over lettuce leaves and garnish with olive slices or onion rings
Serve 4 portions.
