1 cup of lentils
1 whole onion
3 cloves
1 sprig of rosemary
1 tablespoon of salt
2 tablespoons of olive oil
2 tablespoons of vinegar
2 minced garlic cloves
1 cup of finely chopped onion
2 tablespoons of fresh parsley, chopped
2 tablespoons of chives, chopped
1 cup of diced bell pepper
1 cup of lentils

Trim the rosemary and place it with the onion in a saucepan
Add the lentils and rosemary, then add cold water to half the height of the saucepan and season with salt
Simmer over low heat until the lentils are tender but still firm
Drain and remove the rosemary and onion
Transfer the lentils to a bowl
Mix in the remaining ingredients and fold them into the lentils
Serve immediately.
