Wash the oranges well, cut them in half and remove the pulp
Reserve the peels
Cut the pulp into cubes. Reserve
Grate the carrot, cut the radishes, kiwis, and cucumber into thin slices
In a bowl, mix together the mustard, vinegar, oil, and salt
In a medium-sized bowl, combine the carrot, radish, kiwi, cucumber, and orange
Season with the dressing and sprinkle with parsley
Assemble the salad inside the hollowed-out orange half and garnish with green leaves.
