Melt the dark chocolate in a double boiler
Batter it with the heavy cream, stirring constantly until smooth and shiny
Let it cool, mixing occasionally to achieve a thick consistency

Add the sugar crystals and mix well
When the mixture is firm enough to roll out, shape it like salami and wrap it in plastic film
Place it in the freezer for approximately four hours

Make a syrup by boiling the water and red fruit, then stir in the frozen berries and let it thicken
Remove from heat and let cool
When serving, remove the salami from the freezer and let it rest for about five minutes
Cook it with a hot knife and serve with the raspberry syrup on the side.
