3/4 cup plus 1 tablespoon cocoa powder sifted

In a stand mixer, beat the eggs with the flour until light and fluffy
Add the butter gradually, beating constantly

Turn off the mixer and add the cocoa powder, biscotti or crackers, and rum
Shape into a log about 24 cm (9 inches) long and wrap tightly in plastic wrap

Refrigerate for at least one day before serving
Slice and serve.
